Our flagship Big Gin, rested for four months in Westland Distillery's First American Peat Single Malt barrels at our Seattle distillery. Previous to peated whiskey, the barrels held Wild Turkey, making Peat Barreled Big Gin the third use of the oak.


Tasting Notes: 

Vegetal, swiss chard, earthy greens followed by a touch of resinous wood & preserved lemon on the nose

Bitter orange & warm spices envelope the mouth feel

Embodiments of the great outdoors finishes the palate

  • 2 oz Peat Barreled Big Gin
  • Bar spoon Green Chartreuse
  • 3 dashes Scrappy's celery bitters
  • 1/2 oz dry vermouth

Stirred and strained. Served neat. Garnish with your choice of an olive, lemon twist, or caper berry.


  • 1 1/2 oz Peat Barreled Big Gin
  • 3/4 oz Yellow Chartreuse
  • 2 dashes Scrappy's orange bitters

Stir with ice and strain into a cocktail glass. Serve with a full lemon twist.
